Chicken light meat at 40 per cent was mixed with potato paste, rice flour and soy flour in three chips formulas namely chicken-potato, chicken-rice and chicken-soy respectively. These snacks in fried form were nutritionally and organoleptically compared to fried standard potato chips. The shelf life of the chips supplemented with chicken was measured during storage at room temp.
